Banana Brown Rice Pudding Bowl

I have created this bowl due to having banana and brown rice leftover which both needed to be used. Study reveals the UK wastes around £9.7 billion of food each year. The most common food wasted are potatoes – British households waste 5.8 million whole potatoes, bread is the next and every household wastes daily 24 million slices of bread. There is also milk, where daily waste is around 5.8 million glasses of milk, bananas and salad are the next items. The brown rice is a great source of fibre, magnesium, vitamin B6 and banana is a superb source of potassium, vitamin C, vitamin B6. Why would you waste food which is so rich in vitamins and minerals. Think twice before wasting any food and think about how it can be prevented.

Cooking Time: 5 minutes


Ingredients:

  • 1.5 cups of leftover brown rice

  • 1 cup of cashew milk (or dairy)

  • 1 ripe banana

  • 1 tsp cinnamon

Method:

  1. Blend the banana with milk and pour into the saucepan with the rice.

  2. Then add the cinnamon.

  3. Stir it all on medium heat until it’s creamy and thick.

  4. Top it with fruit, nuts, nut butter, or perhaps my homemade natural granola.
