Carrot and Banana Muffins
Nutrition Tip:
These muffins are so tasty and full of potassium and vitamin B. Potassium is needed for our heart regulation and vitamin B provides with energy, is good for never cell function and red blood cells. Quick and delicious muffins filled with some nutrient-rich goodies.
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
- 3 eggs 
- 90 g coconut sugar 
- 150 ml rapeseed oil 
- 2 tbsp of nut milk 
- 60 g rice flour (I used gluten free) 
- 20 g oats 
- 2 tbsp chia seeds 
- pinch of salt 
- 2 medium carrots 
- 2 tsp chia seeds 
- 1 ripe banana - Method:
- Preheat the oven on 200°C. 
- Mix eggs with coconut sugar, so it becomes a smooth foam. 
- Then add the mashed banana, oil and milk. 
- All dry ingredients mix together and then add then to the banana and oil mix. 
- Mix well and at the end, add the grated carrots (use the smooth side of the grater). Line the muffin tray with cake cases and then bake for 20 minutes.
