Chocolate Puffed Quinoa Crispy Bites

Puffed quinoa is a great source of fibre and rich in iron. It’s also a great source of protein, therefore a great nutrient-rich carbohydrate. All, these elements are so important for our health and the best thing is that you can snack on such a lovely healthy treat whilst giving your body what it needs.

Preparation Time: 10 minutes

Cooking Time: 2 hours


Ingredients:

  • 200 g of Quinoa Puffs

  • 200 g of dark 85% cocoa chocolate (you can use dairy/vegan chocolate if you wish)

  • 1 tbsp coconut oil

  • 1 tbsp date nectar

  • 1 tbsp almond butter (not necessary)

  • 1/2 cup pumpkin seeds

    Method:

  1. Put the quinoa puffs and pumpkin seeds into the bowl. Then melt the chocolate and towards the end add: date nectar, coconut oil and almond butter – combine it all well.

  2. Once the chocolate is ready pour it into the quinoa and pumpkin seeds. Combine it all. Put a baking paper into a dish and pour the mixture and spread evenly.

  3. Put it to the fridge for 2 hours and chop when ready to serve.
