Oat & Banana Cookies

These cookies are made from the 5 main ingredients and are so easy to make. They are a great source of fibre, potassium and B6. If you are preferring plant based recipes and cooking a budget, then this recipe is a great option for you.

Cooking Time: 20 minutes


Ingredients:

  • 2 cups of oats

  • 1 ripe banana

  • 1 tbsp peanut butter

  • 1 tbsp coconut oil

  • 1 tsp cinnamon

  • 1 tbsp maple syrup or honey (not essential)

  • 1 tbsp sunflower seeds (not essential)

  • 1 tbsp plant based milk or dairy milk (only if mix is too dry)

Method:

  1. Preheat the oven on 180 degrees. Mash the banana with a fork, then add oats, cinnamon, sunflower seeds (if using) and maple syrup or honey (if using).

  2. Melt the oil with peanut butter together on a medium heat, then add it to the oat and banana mix.

  3. If you see that the mixture is dry add a splash of milk, but don’t make it to wet.

  4. Once the mix is ready, create balls which you can shape into the cookie shape. The mix makes around x6 cookies, depending how big you make the cookies. Put it on a tray with the baking paper.

  5. Then place to the preheated oven and bake for the 20 minutes. Once they are read, let them to cool down for at least 15 minutes before serving.
