Shakshuka – Eggs in Tomato Sauce

This is such a quick recipe, either for breakfast or lunch. It’s a great source of Vitamin D, prebiotics, healthy fats, carbohydrates, and protein. Basically a recipe full of right nutrients which give your body perfect energy boost.
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Ingredients:
- 1 onion 
- 2 cloves of garlic 
- 2 tbsp olive oil 
- 1/2 tsp harissa sauce 
- 1 tin of chopped tomatoes 
- salt and pepper 
- 4 eggs 
- parmesan cheese or feta 
- 1 tsp tamari sauce 
- fresh parsley and marjoram 
Method:
- Pre-heat the oven on 175°C. Cut onion and fry on olive oil. 
- Then add harissa sauce and garlic. 
- Once it’s all golden, add tin of tomatoes, salt and pepper and tamari sauce. 
- Let it thicken up a little bit. 
- Then crack 4 eggs into the mix and put the pan into the oven and grill for 10-12 minutes. 
- Once it’s ready, garnish with fresh herbs. Served it with fresh veggies, halloumi, and toasted sourdough.
