Vegan Rhubarb & Plum Baked Oats
This is a beautiful autumn recipe full of flavours, colours and fibre. If you are after something different in the morning then don’t hesitate to try this yummy baked oats.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Ingredients:
- 2 cups of oats 
- 1.5 cups of nut milk (I used almond) 
- 1 tbsp of choc shot from (I used SweetFreedom) 
- 2.5 tsp cinnamon 
- 1 tbsp of peanut butter (I used Pip&Nut) 
- frozen berries 
- 2 fresh plums 
- 1 chopped rhubarb 
- 1 tbsp of date nectar 
Method:
- Preheat the oven at 190°. 
- In a bowl stir all ingredients together (except rhubarb, plum, 1 tsp cinnamon, and date nectar) and if it needs more oats or milk don’t be afraid to add more. 
- Then add the oats mix onto the small glass baking tray (I use the one which I have for brownies). 
- Rhubarb & Plum Topping 
- Add chopped rhubarb, plums, date nectar and 1 tsp of cinnamon into a pan and cook on medium heat for about 5-10 minutes. 
- Then use the mix and top the oats in a tray with the mixture. 
- Then put the oats into the oven and bake for 20 minutes.
