Vegan Tofu Scrambled Eggs

Tofu is a good source of protein, especially if you are on a plant-based diet. Protein is essential. It is so much more than simply food for your muscles: every single cell in our body contains protein. It plays a role in maintaining our liver function, mood, immunity, hormone balance, skin, hair and so much more. It’s definitely a food group which takes place on our balanced plate.

Ingredients:
- 1 tbsp olive oil 
- 1/2 tofu 
- 1 tsp turmeric 
- 1 tsp Italian herbs 
- 1/2 tsp salt (use less if necessary) 
- 1 tbsp natural yeast 
- 1 chopped mushroom 
- 2 handfuls spinach 
- 1 tbsp tamari sauce 
- 2 tsp sesame nuts mix 
Method:
- Add the olive oil on the frying, then add tofu, turmeric, herbs, salt and natural yeast. 
- Stir with the wooden spoon, so it’s all combined. 
- Then add the mushroom, spinach and tamari sauce. 
- Towards the end, add the sesame seeds mix to add a bit omega-3 onto your plant-based eggs.
